Bernie's wholemeal loaf



Ingredients

7oz wholemeal flour

3oz plain white flour

2oz bran

1 teaspoon bicarbonate of soda

1/4 teaspoon of salt

1 dessert spoon sugar

2oz butter

2 eggs

1 tub buttermilk


Method

  1. Heat oven to 180C

  2. Grease a 2lb loaf tin or use a liner

  3. Sieve white flour, bicarbonate of soda, salt and sugar into a mixing bowl

  4. Add in wholemeal flour and mix

  5. Thinly slice the butter into the dry mix and lightly rub into breadcrumb consistency

  6. In a separate bowl, beat the eggs lightly and stir in the buttermilk

  7. Make a well in the dry ingredients and add in most of the buttermilk and eggs mixture. Fold in to reach a loose dropping consistency, adding the remaining liquid if necessary

  8. Pour into baking tin and bake for 1 hour. Check loaf is cooked by tapping on the bottom, a hollow sound indicates it is baked. Place on wire rack to cool
